Instead of a few large pancakes that fill you up, think mini short stack at The Ritz, a tidy order that works well as a small meal or shared appetizer at brunch. A half-dozen Almond Pancakes ($10) come to a plate, the edges all golden, lacy and crisp. They run nearly an inch in height, and fluffy only begins to describe the moist, fine crumb hinting of toasted almonds. There are caramelized bananas on the side, and you'll want to polish off that little jug of maple syrup—it's infused with a heady dose of roasted vanilla beans.
